Broccoli, Brassica oleracea var. italica, is cultivated as a cool season crop in open fields, with multiple planting cycles in spring, summer and autumn. The product consists of compact flower buds with firm stems.
After harvest, broccoli is rapidly cooled to preserve its mild, slightly earthy and subtly sweet flavour. Heads are graded by weight and diameter, typically between 150 and 500 grams.
