Chicory, Cichorium intybus var. foliosum, follows a unique two phase cultivation process. In summer, the roots are grown in open fields. After harvest, the roots are placed in a dark, temperature controlled environment to force the heads to grow. The absence of light prevents bitterness and ensures a refined, lightly nutty flavour profile.

The final product is a compact, torpedo shaped head with tightly closed leaves that fade from white at the base to pale yellow at the tip. High quality chicory is firm, free from discolouration and has closed tips.
