These microgreens and cresses are cultivated year round in high tech Dutch greenhouses. Instead of soil, they grow on natural cellulose or coconut fibre mats. This controlled indoor environment results in a clean, ready to use product that remains attached to its growing medium until required in the kitchen.

Harvest takes place at a remarkably young stage, precisely when the first cotyledons or true leaves are fully developed. The small, delicate stems and leaves display intense colours, from deep green to rich purple. Despite their delicate appearance, they deliver an immediate crisp texture and concentrated flavour boost to every dish.
