These frying potatoes are cultivated exclusively on the rich, heavy sea clay soils of the Netherlands. Specific Solanum tuberosum varieties such as Fontane and Challenger are grown specifically for frying. The fertile clay soil produces an exceptionally high dry matter content, the secret behind their kitchen performance.
Raw, the potatoes reveal a bright white to cream interior. After processing, they become golden fries with a clean, full potato flavour and a touch of mild sweetness. The composition ensures lower fat absorption and a distinctive double texture: a very crisp, firm exterior that transitions into an airy, dry and floury core.
