Product description Garlic

The garlic bulb, botanically known as Allium sativum, consists of a cluster of individual cloves. Each round to slightly flattened bulb is protected by a dry, intact outer skin that may range from bright white and cream to pink or purple striped, depending on the variety. The cloves are firm and full, individually wrapped in papery skin and free from sprouting or dehydration.

The characteristic aroma and flavour of garlic are determined by sulphur compounds such as allicin. These compounds are released when the cell structure is damaged, resulting in the powerful scent and flavour that can be measured both qualitatively and quantitatively.
