The chestnut mushroom, also known as brown cremini, is cultivated year round on nutritious composted substrate beds. The mushrooms are harvested when the smooth light to medium brown caps are still closed, measuring approximately 30 to 60 millimetres in diameter.

In the kitchen, they are distinguished by a firm texture that holds well during cooking. The flavour is distinctly savoury and earthy, developing into a rich umami profile when heated.

Environmental & biodiversity impact Cultivation is fully circular. Straw from arable farms is supplied to riding schools, after which the horse manure is used as substrate for mushroom cultivation.
